Since October 2021, Con Todo, located at Celis Brewery, has been transporting diners to the heart of the Rio Grande Valley, thanks to the culinary vision of owner and chef, Joseph Gomez. This vibrant food truck has garnered attention not just for its delicious offerings but also for its commitment to authenticity and community engagement.

The Backstory

Joseph Gomez’s culinary journey began amid the global upheaval caused by the COVID-19 pandemic. Inspired by the rich culinary traditions of his upbringing in the Rio Grande Valley, Gomez turned a newfound passion for baking into a full-scale culinary venture. His childhood memories, often filled with the aromas and sights of family cooking, fueled his desire to explore his heritage through food. In 2021, he took the leap to open Con Todo, bringing a fusion of tradition and innovation to the North Austin food scene.

What Con Todo Offers

At Con Todo, the culinary experience is crafted carefully by a small team. With Gomez at the helm and his right-hand cook, Fernando, they offer a menu that showcases a selection of traditional Mexican flavors, underpinned by ingredients sourced locally to ensure freshness.

The eatery prides itself on using quality corn for tortillas, beans, and select chiles from Tamoa — a dedicated organization that supports small farmers by purchasing surplus corn intended for personal consumption. This sustainable approach not only benefits local farmers but also assures that each dish bursts with flavor.

  • Bistec Estilo Matamoros Taco: A rich and savory beef taco that pays homage to regional specialties.

“People are confused at first. They’re like, ‘Well I don’t know what a Bistec Estilo Matamoros taco is.’ It’s a lot of talking to people, storytelling, and just being more open about it,” he shared. This open dialogue helps bridge cultural gaps and fosters understanding through food.

Despite the challenges faced in the food industry, including the potential for burnout, Gomez relishes his role in crafting experiences that unite people around the dining table. He emphasizes the communal spirit that emerges through food, stating, “I love food so much, and the thing I enjoy most about it is how it brings people together.”
